Late night at work meant grabbing a bite on the go. Lucky me I live steps away from Kimchi Grill.
Kimchi Grill is the bricks & mortar location of the Kimchi Taco Truck and you guessed it:
Korean-Mexican fusion .
I will admit I stalked them from the first days of it being just the truck’s commercial kitchen, initial signs of restaurant construction and finally, until their opening. I eat there probably once a week. For some reason my waistline doesn’t appreciate it as much as my taste buds do.
My personal favorite is their signature & amazing Korean BBQ Beef Short Rib. It’s got a sweet & spicy zing to it, cooked to the point it melts in your mouth. Whether served in a taco, burrito or a kimchi bowl, it is delicious.
Tonight I opted for the burrito.
It’s huge and you could easily make two meals out of it.
I did not. Sorry diet.
Served with red cabbage apple pear kimchi slaw, Kimchi Fried Rice, and a choice of beans (I opted for a bean-free night) and of course the usual suspects of pico de gallo, miso crema and provolone. Guac is extra and I got it.
I sit here content. Belly full. Late night at work a distant memory. Bliss.
