Sometimes you want something really tasty but with a little less effort than usual so when that happens, or I’m crunched for time, I cheat by using store-bought bases to which I add a little personal touch.
Today was one of those days.
Brunch, was two 3-minute poached eggs on a toasted english muffin that I’d spread with harissa for a base and then drizzled a sriracha hollandaise atop the eggs finishing them with chopped chives and black pepper. The harissa was from a local Brooklyn store. The base for the hollandaise was from TJ’s to which I added a few dashes of sriracha.
My beverage of choice this morning was a Bloody Mary.
Dinner, was haddock with risotto. I coated the haddock with a little olive oil, seasoned it and dusted it with a little cumin before loosely wrapping it in foil and broiling it for ten or so minutes. The asparagus risotto was from Trader Joe’s, I added freshly cracked pepper and some freshly grated parmesan to it for some depth of flavor.
With dinner I opted for a glass of Chardonnay from Hanging Vines.
Each meal took me less than 15 minutes to make and was quite delicious.
Mission accomplished: a tasty lazy Sunday.
